"Just Add Tomatoes"  Linditas' Instant Salsa Mix

 

 

Grandma’s Chicken Bundles
4 serving recipe

4 Boneless Chicken Breasts
1 27 ounce can of Peeled Whole Roasted Green Chilies, Hot or mild
3 cups of mixed shredded cheese’s, use your favorite
1 cup (2 sticks) Butter
3 cups Mi Ranchito Corn Chip, crumbed

PREP
Prepare Melted Butter
Prepare Mi Ranchito Corn Chips Crumbs
Place Mi Ranchito Corn Chips in bag, and crush with a Handball, then place
in blender on crumb setting.
Slice whole green chilies into 3 inch thin strips.

PROCESS:
Wash Boneless Chicken Breast well
Clean and trim Chicken Breast
Place skin (outside) down
Place cellophane over meat
Starting from center out
Tenderize flat to ¼ inch thickness

Place roasted green chilies in center of meat
Place cheese on roasted green chilies
Role sides of Boneless Chicken Breast in first, then roll into a bundle

Move Bundle to melted butter
Roll in forward direction

Move to Mi Ranchito Corn Chip crumbs
Roll in forward direction

Place in cooking dish, away from edges
Cover with Foil
Refrigerate for a minimum of two hours.
This helps keep the bundles together.
Prepare in the morning for a quick dinner.
Preheat oven to 325 degrees F.
Bake for 30 to 40 minutes @ 325 F. degrees on center rack.

Serve with Linditas Salsa. Enjoy!
