Chili-Seared Salmon with Roasted Pepper
Salsa
Ingredients:
4 6oz. salmon filets, about 1 inch thick
2 tablespoons chili powder
¼ Teaspoon Salt
1/8 Teaspoon black pepper
2 Teaspoons. olive oil
Instructions for Salmon:
Combine chili powder, salt and pepper. Rub evenly over salmon filets. Heat oil
in a large non-stick pan over medium-high heat. Add filets; cook 4 minutes on
each side or until fish flakes easily. To serve, top salmon with salsa.
Roasted Pepper Salsa:
¾ cup red onion, diced
¼ teaspoon ground cumin
1/8 teaspoon salt
½ cup plum tomato, diced
1 TABLESPOON. fresh lemon juice
1/ c yellow bell pepper, roasted and diced
2 TEASPOON cider vinegar
1/8 teaspoon sugar
1/8 teaspoon ground coriander
2 tablespoons fresh cilantro, chopped
1/8 teaspoon ground cayenne pepper
1 tablespoon Serrano pepper, seeded and minced
Instructions for Salsa:
Roast peppers on an open flame until black on the outside. Place in a bowl and
cover with plastic wrap. Steam for 10 minutes. Peel under cool water, removing
skin and seed. Dice. Discard stems. Combine all ingredients in a bowl and stir
well. Let stand at least 30 minutes, stirring occasionally.
