Chick Pea Dip
Ingredients:
1 cup chick peas (garbanzo beans),
cooked and coarsely chopped
1 ripe tomato, seeded and diced
4 scallions, sliced
1 garlic clove, chopped
1 tablespoon fresh cilantro or parsley, chopped
1 tablespoon fresh lemon juice
For Dressing:
2 teaspoons fresh lemon juice
½ teaspoon salt
1/8 Teaspoon black pepper, freshly ground
2 Tablespoons. olive oil
Directions
In a small bowl, combine the lemon juice, salt and pepper. Slowly whisk in the
olive oil. Set aside. In a food processor, combine the chick peas, tomato,
scallions, garlic, and cilantro or parsley. Pour the dressing over the mixture,
puree lightly to mix.
