Anne Trujillo who is my friend and is well known in Colorado as 7 News Anchorwoman, introduced her famous Cheesy Rice Recipe to our viewers on my cooking show. Anne is an award- winning broadcast journalist. Her reporting and anchoring work has been recognized by the National Association of Television Arts and Sciences, the Colorado Broadcasters Association, The Associated Press, the Colorado Hispanic Media Association and Women in Communications. Throughout her career, Anne has been very active in the community. She has served on many boards and has received numerous awards. She is so delightful and truly fun to be with. Married with two beautiful children she admits to using her crock pot on a weekly basis (Shes not alone). Dinner is usually prepared before she leaves to the station. With her busy schedule, Id be using that crock pot on a daily basis. Anne was kind enough to share her recipe that her family and friends have enjoyed for years..... Lets get started! Annes Cheesy Rice Casserole 2 cups long grain white rice 8 oz. sour cream (Light) 2 cup shredded cheese (Monterey Jack) 1 4oz. canned green chilies (I prefer the hot heat level) 3 tbs. butter Cook rice. Preheat oven to 350 degrees. In a baking dish add the cooked rice, make sure its cooled down. Then add sour cream, shredded cheese (save some for topping), green chilies, mix well. Sprinkle with cheese and top with butter. Salt and Pepper to taste. Place in oven and bake for about 20 minutes. Serves 4-6. Enjoy! |
