Caesar Salad Wash lettuce leaves individually and pat or spin dry. Tear
leaves into small to medium size pieces and place in a large wooden bowl. In a
shake jar mix the olive oil, tarragon vinegar, salt garlic, lemon juice, dry
mustard, coddled egg, and pepper. Shake vigorously. Pour over the lettuce and
toss. Add the parmesan cheese and toss again. Anchovies are optional. Serve
immediately. |
