BUFFALO TOSTADAS
2 LBS OF GROUND BUFFALO
1/4 CUP ONIONS (chopped)
2 CLOVES GARLIC (chopped)
1/2 CUP CILANTRO (chopped finely)
1 TEASPOON SALT
1/2 TEASPOON PEPPER
1 BAG OF LINDITAS' INSTANT SALSA MIX (OPTIONAL)
2 DOZEN CORN TORTILLAS
1 CUP MONTEREY JACK CHEESE
1/2 HEAD OF CHOPPED LETTUCE
3 DICED TOMATOES
This traditional meal
can be made with almost anything. Beans, Pork, Chicken or ground beef. It is
inexpensive and for those of you who are in a time crunch, it is very easy and fast to
prepare. I find that Buffalo meat is leaner than ground beef and also has a great flavor.
Begin cooking the buffalo meat. When almost browned, add your onions, garlic,
cilantro, salt, pepper and optional Linditas' Instant Salsa mix. Turn your mix to
low and let sauté. You can add diced tomatoes to give it color. In another
pan with hot shortening, fry your corn tortillas until their stiff and crispy.
For your condiments, have the cheese grated and in a bowl, you can also have some finely
diced fresh white onion, a bowl with your chopped lettuce and a bowl with your diced
tomatoes. Once your done frying your tortillas then comes the fun and easy
step. Put them together. Place the cooked buffalo meat on the crispy tortilla,
sprinkle onions, cheese lettuce and tomatoes. Just add prepared Linditas' Salsa and
your ready to go!!!!!!!!!!!!!! This recipe can make 2 dozen tostadas or less.
You can accompany the tostadas with any other side dish to make a complete meal.
Beans, Spanish rice or fideos are a popular side dish.
