Winters Special (Baked Spaghetti)
This has been the coldest winter I can remember since we moved here 28 years
ago! My scarf seems to be permanently attached to my neck. This weather reminds
me of the Midwest winters. Once we got our first snow fall, it would then stay
on the ground for the rest of the winter season. We can now relate to the mid
westerns.
The Winters Special (Baked Spaghetti) is an old family recipe that was my
husbands grandfathers favorite dish. Art Winters, better known as, "Gunk," ( a
nickname). Grandpa Gunk lived to be 103 years of age. He had a great sense of
humor and loved preparing this dish that has been passed on to us and would love
to pass this on to you. This is one of my favorite recipes and so easy to
prepare,
I serve this dish with fresh garlic bread, salad and red wine. The leftovers
never seem to make it to the freezer. You'll see why.
Winters Special
(Baked Spaghetti)
1 lb spaghetti
1 lb bacon
1 lb sharp cheddar cheese
1 large can whole or diced tomatoes (24 oz)
red pepper (cayenne)
salt
Cut bacon into 1 inch pieces; fry or broil
Cook spaghetti and drain
Grate cheese
In large bowl (4.5 QT), mix spagetti and small amount of bacon grease (2
tablespoons) to coat strands; alternately, add cheese, bacon, tomatoes (if
whole, mash slightly or dice), and salt and red pepper to taste. Mix well. Bake
at 350 degrees for about 45 minutes.
Serves 8
Recipe may be doubled. Any surplus can be frozen for future serving.
